Dashi (stock) Culture
The origin of Japanese traditional “Washoku (Japanese food)” is in the Kansai region.
Various food ingredients have been gathered from every region of the country to Kansai, which has prospered as the center of Japan together with the development of businesses and distribution.
Kansai has fostered Ryotei (fancy Japanese-style restaurant) culture such as “Kaiseki-ryori (a simple meal served before tea ceremony),” which makes best use of seasonal ingredients by using specially prepared Dashi (stock).
In 2013, “Japanese traditional Washoku” was registered as an Intangible Cultural Property by UNESCO.
